"What does it mean when the channels are not defined?"
A channel in the chart is a line or branch of energy that is shown on the chart as running between one center (shape) shown on the chart to another center (shape) on the chart, as shown in Carla Bruni's Human Design Chart above.

When a channel is "defined" in the chart the entire channel will have color showing in it, whether that color is black, pink or candy-cane striped.
This means the energy of this channel is fully activated in Carla Bruni's life and she has access to it on a regular and consistent basis throughout her entire life.
If the channel is colored in white or "undefined", i.e., contains no color, this person is able to "play" with, learn and gain wisdom from the energy of this channel and then reflect the wisdom they have gained back to those they come in contact with.
